My fathers’ career started in Delhi’s first ever-Indian restaurant. On his time in Old Delhi on the circuit, he has worked his way up in the prestigious Claridges in Delhi, Taj Hotel, Head Chef of Air India’s Flight kitchen in the 1970s.
These are not the type of recipes a well-versed home cook or group of Indian aunties can produce. We are here to champion authenticity and share the historical antiquity of Old- Delhi’s culinary food scene; where our story first began. Dishes such as Classic Makhani, Real Mughlai Quorma, Madras and many other pre colonised recipes.
The past 17 years have been devoted to learning the craft, for the fear of losing these. Look forward to the next phase, making this my mission to restore what we know of Indian food in the UK. Pandeli – here we come!
