The Pandeli kitchen is managed by the Panwars. A father and son duo with a difference. The recipes are from a classic period, circa 1885 handed down from chef Ram to his son Amit.
Chef Ram’s career started in Delhi’s first ever Indian restaurant 1940. It was open by a lovely family called the Lamba Family. The restaurant was Kwality, Connaught Place, Delhi. It was for the Delhi socialites and food purists. A breeding ground for the most talented chefs to truly showcase true to form dishes of all-regions.
Authentic Indian Food vs British Classic Gastropub offerings

We’re going back to some serious heritage, tradition that has now been lost. 99% of all Indian restaurants use the same base for sauces. That’s not what it’s about. What we produce is certainly not alien, but I’d say having worked with Dad since 2003, it certainly is more refined.
He’s a man who dominated the cooking scene in Old Delhi, class of 1970. It’s really vital that I carry his message through and try my best to share his recipes with you. Thank you “- Amit – Marlbank Inn, Pandeli Kitchen
